This cake comes straight from my great‑grandmother’s kitchen, the kind of simple, dependable recipe she baked without fuss and passed down with love. More than 100 years old, it’s wonderfully old‑fashioned — the mayonnaise keeps it unbelievably moist, and the cocoa gives it a deep, comforting chocolate flavor.
Preheat the oven to 350°F. Lightly spray a 9 1/2‑inch fluted cake pan with cooking spray and set it aside.
In a large mixing bowl, whisk together 1 cup granulated sugar, 5 tablespoons cocoa powder, 2 1/2 cups all‑purpose flour, 2 teaspoons baking soda, and 1 teaspoon baking powder.
Mix together 1 cup of water and 1 cup of mayonnaise until combined.
Combine the wet and dry ingredients, then mix on low to medium speed with a hand mixer until the batter is smooth and fully combined.
Pour the batter into the prepared pan. Bake for 25–35 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cake to cool completely before removing it from the pan. Once cooled, sprinkle with powdered sugar, if desired.
